I don’t know if i’ve said this before but where i’m staying right now, there is bound to be a steak or a chicken sizzling in the pan everyday. If you’re wondering why…
Guys(who can’t really cook) who are body builders = go figure.
Okay, actually they’re not too bad. Heh. They can fry a steak…tell me, how many can fry a good juicy steak which is not overdone? They’ve learned how to cook pasta (with bottled sauce) and fry broken eggs. They’ve learned how to boil rice. Steam chicken. Mash potatoes. So not too bad ey? So proud of them lol!
So i guess after staying with them for sooo many months, i’ve mastered how to cook steaks and chicken breast really really really well. Having to cook it nearly everyday makes you the master of it all. Heh. But it gets boring after awhile. There’s only so much you can do with chicken breast. And because i was dining alone tonight, i decided to whip up a salad…the word vegetables in NOT in their vocabulary.
Rocket, Strawberries & Chicken Salad
Serves 1 (entree size)
1 Chicken breast/thigh deboned
Handful of strawberries, sliced
2 Handful of rocket(arugula)
Shavings of parmesan/pecorino(optional)
Toasted almond/walnut (optional)
Extra virgin olive oil
Salt & pepper
Like what a salad is supposed to be, its simple and classy. That is one densed bowl of salad, but if you’re serving it as an entree, you could plate it up elegantly on a little plate. If the pepperiness of rocket isnt your cup of tea, feel free to use your favorite leaves, or mix them up a little. Its also serves as a “using up all the nearly gone bad veg” dish, in this case, my leftover tomatoes.
Roast or pan fry your chicky and slice into thin strips. You can also shred it, whatever rocks your boat. Place into a bowl of rocket and strawberries. Drizzle a little EVOO (just enough to lightly coat), a squeeze of lemon juice or balsamic vinegar and season to taste. Toss it all, or serve as it is. Shave over some cheese if you’d like or top with a sprinkle of nuts.
